Papaya Halwa

Introduction:
I'm going to tell you a very simple and easy to cook halwa recipe. I learnt it from my friend's mother.It's made by papaya and it's a delight to all those persons who hate to eat papaya including me. It's a very healthy and nutritious recipe which has very low calorie as i'm not adding too much ghee or condensed milk into it. It gives much pleasure when people eat it first time and get surprised to know that it's made up of papaya.So try this recipe and enjoy.


Ingredients:
Papaya: 1 big
sugar: 1 cup
ghee: 2 tsp
cardamon (elaichi)powder: 1 tsp
saffron: 4-5 leaves
dryfruits: cashewnuts, pista, almonds grated(for decoration)

Served for: 2 persons

Preparation time: 15 min

Method:
Take the papaya and peel off it's skin through a peeler knife. make sure that the papaya should neither be fully raw nor fully rippen. otherwise it'll create problem during grating the papaya. after peeling cut the papaya into two halves and remove all the seeds and inner skin with the seeds.

Now grate the papaya. It'll also release juice out of it . keep all into a bowl. mix sugar in the grated papaya and keep it aside for 1/2 an hour. You can add more sugar if you feel that the mixture is not sweetend properly but avoid to add too much sugar into it as it'll make the halwa to get hard after cooking.

Now take a non stick pan. Pour the papaya and sugar mixture into it and put it on high flame. Keep stirring till the whole liquid of the mixture is cooked. Add saffron. You can add some yellow color if you don't have saffron. Keep cooking on high flame till the mixture gets thick like halwa. Add ghee and cardamon powder. Mix properly. Put off the flame. Mix the dryfruits. Serve hot.

Tips:
1.You can keep it for 5-6 days without freezing.
2.You can avoid ghee if you want as it is added just for giving a little consistency to halwa so that it does not get hard if kept for long.
3.You can also make nice papaya laddoos out of the same mixture. Just cook it for 2-3 minutes more and add some more sugar to get it thick and let it cool. prepare small balls of it and decorate with dryfruits.
