Potato and herb salad

Introduction:
This potato salad will give you the feel of international taste while sitting at your home dining table. It is made up of simple ingredients but tastes delicious. Try this salad as a variant for your dinner table.

Ingredients:
Baby potatotes: 8 (boiled and peeled)
Hung curd: 1 cup
Dry pudina powder: 1 tsp
Chopped green chillies: 2
Chopped coriander: ½ cup
Chopped mint leaves: ½ cup
Lemon juice: 1 tsp
Black pepper powder: ½ tsp
Mayonnise: 2 tsp
Salt: to taste
Oil: 1 tsp
White sesame seeds: 1 tsp

Method:
Peel the boiled potatoes and with help of a fork, poke all the potatoes. In a bowl, take hung curd. Add dry pudina powder, black pepper , salt and lemon juice to it and mix well. Add potatoes to it and mix well. Let it rest for 3-4 mins. Now mix chopped coriander, mint leaves and mayonnise to it and mix well. In a pan, heat oil. Add white sesame seeds to it. When they starts spluttering, add this dressing all over the salad. Serve immediately.


Tips:
This salad taste much good if the potatoes are a little warm. So try to make the salad with freshly boiled potatoes to retain the warmness.
You can add spring onions and any other herb of your choice to this salad.

Corn salad

Introduction:
It's an easy and quick salad made out of boiled corns with salad veggies. It goes well with your daily lunch and dinner.

Ingredients:
Green corn: 1
Onions: 1(Chopped)
Tomatoes: 1(Chopped)
Cucumber: 1 bowl(Chopped)
green chillies: 1/2 tsp
Cabbage: 1/2 bowl(Chopped finely)
Carrots: 1(grated)
Lemon juice: 4 tsp
Red chilli powder: 1/2 tsp
chaat masala: 1 tsp
Salt: to taste
Green corriander: for garnishing

Preparation time: 10 mins
Cooking time: 10 mins(to boil the corn)

Serves for: 2 servings

Method:
Remove the leaves of the corn and break it into two halves. Put it into a pressure cooker with sufficient water and cook it for 2 whistles on medium flames. Put off the flame and let the pressure to release by itself. Meanwhile chopped all the salad veggies.
Open up the cooker and take the corn out. Run some cold water over it. Now with a help of knife, take out all the corns out of the stem. Put all the ingredients into a bowl along with the boiled corns. Mix properly. Garnish with corriander leaves or with fresh cream.

TIPS:
1. You can adjust the type of vegetables according to your taste.
2. Make sure the corn is perfectly boiled. Otherwise you'll have to chew it hard, while eating.
3. You can keep the boiled corns in fridge and make the salad instantly whenever you want.
4. If you don't get the fresh green corn in the market, you can use the canned corns available in the store.
5. You can also mix different kind of  fruits along with sweet corns to make a delicious corn fruits salad.

Macaroni cream salad

Introduction:
Salad is an important part of any feast. I tried to make a new kind of salad. I got the idea when the other day I was having some left over boiled macaronies and i was feeling a little lazy to make pasta out of it. so as a quick preparation, I made this salad with the help of the regular items stored in my fridge and it was yummy.

Ingredients:
Macaroni: 200 gm
Boiled potatoes: 1 cup(cut into long pieces)
Spring onion: 1 cup(finely chopped)
Tomatoes: 1 cup(cut into long pieces)
Green chillies: 1 tsp(chopped)
Lime juice: 1 tsp
Mayonese: 100 gm
Fresh Cream: 2 big spoon
Black pepper: 1 tsp
Salt: To taste 
Corriander leaves: for garnishing

Serves for: 4 persons

Preparation time: 10 mins

Method:
Boil the macaronies with enough water. When the macaronies are properly boiled, strain the excess water and pour cold water over the macaronies. Set them apart. cut all the vegetables into long thin pieces. take a bowl and mix all vegetables with macaronies. add mayonese, pepper and salt. add lemon juice. Referigerate it for 5 mins. Add fresh cream before serving. garnish with corriander leaves.

TIPS:
1. you can add any vegetables like boiled peas, corn, mushrooms,cabbage,capsicum etc. in salad.
2. you can also put some chilli sauce into it.
3. If you don't have mayonese then try this recipe by adding tomato sauce and garlic sauce. I tried it and it was yummy too.
4. you can make macaroni fruit salad by adding fruits instead of vegetables.
5.you can keep boiled macaronies in fridge for 2-3 days. just make the salad instantly whenever you want.
