Veg. Momos with spicy tomato chutney

Introduction:
Momos are basically a tibetan dish but it's quite popular in nothern region of india. I'm a big fan of it and i don't forget to grab a plate of Veg. momos from a street vendor whenever i'm in jaipur or delhi. It's so yummy and moreover zero oil recipe. You can eat a lot of it if you like to eat less oily dishes.

Ingredients:
for filling:
Onions(grated):1 cup
Cababge(grated): 2 cup
carrots(grated): 2 cup
Capsicum(grated): 1 cup
Salt: to taste
Black pepper: 1 tsp
Oil: 2 tsp
For Momos:
Refined flour: 2 cup
Salt: 1 tsp
Baking powder: 1/2 tsp
Water: to kneed the dough
For Chutney:
Tomatoes: 2 medium sized
Whole red chilli: 4
Fenugreek seeds: 1 tsp
Cumin seeds: 1 tsp
asefoetida: a pinch
salt: to taste
Mustard Oil: 2 tsp

Preparation time: 20 mins
Cooking time: 15 mins

Method:
Heat oil in a pan. Add onions and saute. Add all the vegetables for filling and the spices and cook till the vegetables are cooked.
Sieve the refined flour and miz the salt and baking powder in it. Add sufficient water to make soft dough out of it.Keep it aside for 10 mins.
Now take a small portion of dough and make a small ball out of it. Roll it into a small puri shape. Fill some vegetable filling into it and cover it like we do for stuffed paranthas. you can change the shpae according to you. Make all the momos in the same way. Heat water in a stimmer or cooker. you can use the way you use to make idlis. Place a stand in the boiling water and place a dish over it. Put all the momos in it and cover the lid and cook for 15 mins on medium flame.
Open the lid and check through a knife whether momos are cooked or not. if they don't stick to knife, it's cooked.
serve hot momos with spicy tomato chutney.
For cutney: Heat oil. Add cumin seeds, fenugreek seeds and asefoetida. Add whole red chillies and fry for a minute. Add chopped tomatoes and salt and cook for 3-4 mins till the tomatoes are soft. Put off the flame and let it cool. mix it in a blender and chuney is ready to serve. You can keep this chutney in fridge for 6-7 days and it goes well with paranthas and idlis too.

TIPS:
1.you can also make momos from wheat flour.
2. Make sure to roll into thin puris.
3. You can add or substract vegetables as per your choice.
4.You can add boiled noodles with a tsp of soya sauce in the filling along with other vegetables. This will make delicious veg spring momos.
5. You can make all the momos and wrap in aluminum foil and keep in freezer. whenever you wanna eat just steam them and enjoy.
6.You can also fry the momos instead of steaming. It also taste delicious.
7. Those ,who like to eat non veg, can use egg and chicken for filling.

Veg Paneer Kathi roll

Introduction:
Kathi rolls are basically from kolkata and a very famous snack. It's easy to make and much more easy to eat. That's why it's one of my favourite food while i'm travelling. Kathi roll can be made out of any vegetable filling. I'm telling you one filling made up with paneer.I'll give you tips at the end of the recipe to make it more easy.

Ingredients:
For filling
Cottage cheese(cut into cubes): 250 gm
Green Capsicum(Long slices): 2 cups
Tomatoes(Long slices): 2 Cups
Green chilli: 1 tsp
Ginger garlic paste: 1 tsp
Fresh curd: 1 cup
Gram flour(besan): 2 big spoon
Red chilli powder: 1tsp
Turmeric powder: 1/4 tsp
Corriander powder: 1/2 tsp
Garam masala: 1/2 tsp
Chaat masala: 1 tsp
Dry Kasoori methi: 3 tsp
salt: as per taste
cumin seeds: 1 tsp
Oil: 2 tsp
Green corriander leaves: for garnishing
For Kathi rolls:
Wheat Flour: 2 Cups
Refined flour: 1 cup
Oil: 1 tsp
Salt: 1tsp

Preparation time: 30 mins
cooking time: 10 mins
Serves for: 4 persons

Method:
Take all the ingredients for the rolls into a big bowl. Add sufficient water to make a nice smooth dough out of it. cover it with a wet cloth and keep aside.

Now for preparing the filling, take a bowl. Add curd and besan. mix all the spices into it. Now add paneer and sliced tomatoes along with kasoori methi, ginger garlic paste and green chillies and keep aside for 10-15 mins.

In a pan, take oil for saute the capsicum. when oil is heated up, add cumin seeds and then the sliced capsicum. saute till the capsicum become soft.Now add the paneer mixture and cook till the water is soaked and mixture becomes dry. put off the flame and add corriander leaves.

Now to make the rolls, take small bowl out of the dough and roll into chapatis. roast both sides like a parantha. It means apply oil on both sides while roasting. Make all rolls in this way. Now take some paneer filling and put it into the middle of rolls. Roll it tightly, such that filling does not come out. You can fix a toothpick to seal the roll or pack it directly into aluminium foil. The best way for serving them is to cut the rolls into two halves.Serve with green chutney or tomato sauce.

So yummy kathi rolls are ready to go with you on any holiday.

TIPS:
1. You can also add onions to it.
2. Make sure that all the vegetables are cut into same shape. This is the basic of all the recipes. It adds beauty to any kind of food preparation.
3. You can make any kind of filling as per your liking. for example mix veg filling, Potato filling, Egg bhurji etc.
4.The rolls can also be made out of refined flour only. just to keep it healthy, I make it with wheat flour.
5.The rolls should be thin in thickness.
6. You can also spread a layer of cheese over the rolls, before putting the filling. It'll enhance the taste many times.

Lauki ka raita

Introduction:
Raita is considered as an essential and delicious sids dish in every feast in india. We can make raita out of different things. I tried to make raita with lauki which is easily available in this hot season. This is a wonderful preparation using lauki and i can say that those who don't like to eat lauki, will definately like this raita.

Ingredients:
Lauki(bottlegourd): 250gm
Fresh curd: 500 gm
Milk: 1 cup
Salt: to taste
Black salt: 1/2 tsp
Black pepper: 1 tsp
Roasted cumin seed powder: 2tsp
Pudina powder: 2 tsp
Red chilli powder: 1 tsp
Sugar: 2 tsp

Serves for: 4 persons
Preparation time: 10 min

Method:
Grate the lauki and boil it. You can boil it in a sauce pan or in pressure cooker. When the lauki is boiled, strain the excess water and squeeze all the juice out of the lauki. Take the curd and whip it through a hand whisker or in blender. Add milk to reduce the thickness of the curd. You can add water also. Now add all the spices. I like to have it sweet in taste rather then salty, so you can add more sugar. Now add the boiled lauki and keep in fridge to chill the raita.
Serve it with hot chapatis and naan.

TIPS:
1. Add salt just before serving otherwise it'll make the raita sour in taste.
2. Always use fresh curd to make raita.
3. You can make it purly sweet. Don't add salt and pepper. Add more sugar to make it perfectly sweet. It'll make a wonderful sweet dish.
4. You can add the lauki directly if you like the taste of raw lauki.

Shahi Palak Paneer

Introduction:
Palak paneer is a very healthy and rich prepartion of paneer and serves the purpose of main course in party cooking. Besides being healthy, it tastes delicious. I make it more healthy by adding some other green leafy vegetables and it augments the taste of usual palak paneer. Try it out.

Ingredients:
Fresh Palak: 500 gm
Fresh green methi: 150gm
Fresh spring onion: 150 gm
Ginger garlic paste: 2 tsp
Tomatoes: 4 medium size
Green chilli paste: 1tsp
Paneer(cottage cheese): 250 gm
Red chilli powder: 1tsp
Corriander powder: 2 tsp
Garam masala: 1/2 tsp
cumin seeds: 1 tsp
asefoetida: a pinch
Oil: 4 tsp
Salt: to taste
Lemon juice: 1 tsp
Fresh cream: for garnishing

Serves for: 4 persons
Preparation time: 15 min
cooking time: 10 min

Method:
Wash Palak, methi and spring onion and chop them. Put them together in pressure cooker and add 1 cup of water and cook for 1 whistle on medium flame. Puree the tomatoes. Let the boiled palak to cool and then make a paste of all the boiled veggies.

In a kadhi, heat oil. Add cumin seeds and asefoetida. now add ginger garlic paste and fry for 1 min. Now add tomato puree and green chilli paste. and fry till the oil seperates. Now add all the spices and cook for 1 min. Now add the palak paste and cook till it starts boiling. you can add more water if you want. Now add the paneer cubes into it and cook for 2 min on medium flame.
Put off the flame. Add lemon juice. Add fresh cream just before serving.

TIPS:
1. You can add dry kasoori methi instead of fresh green methi if not available.
2. You can add normal onions instead of spring onion if not available.
3. Do not boil the palak for more time otherwise it'll loose it's nutrients. 1 whistle is enough to cook the spinach.
4. You can also add fried paneer cubes into it. I like the non fried version of paneer. so i use the paneer directly.

Veg Pan Pizza

Introduction:
Pizza is basically an italian food But it's widely popular all over the world. Youths are crazy about Pizzas in all cities and even i'ma big fan of it. I used to have pizza made by pizza hut or dominos. but dammnn........the place where i'm currently living doesn't have any pizza center nearby. I have to travel a 2 hour distance if i want to eat pizza. So I tried to make pizza at home and that too even without baking it. I swear, it tasted heavenly and satisfied all my taste buds.I'll tell you the arrangement I used, to roast the pizza and i think it's a great way to make pizza at home.

Ingredients:
Pizza base: 2
Pizza cheese: 1 pack
Mayonese: 6 tsp
Onions: 2(sliced)
Tomatoes: 2(sliced)
Cabbage: chopped
Capsicum: chopped
black olives: chopped
black and white pepper powder: 1/2 tsp each
Oil: 1 tsp
butter: 2tsp
salt: to taste
Tomato ketchup: 4 tsp

Serves for: 2 persons
Preperation time: 15 mins
Cooking time :25 mins

Method:
First of all, cut all the vegetables in a same shapa. slice the onions, tomatoes and capsicum and cabbage. heat 1 tsp of oil and add onions to it. saute for a min. add capsicum and cabbage. saute for 4-5 mins till the vegetables get softened. I'm cooking the vegetables seperately so that it'll take less time for the pizza to get cooked. You can place the veggies directly over pizza if you don't mind slightly raw taste of vegetables.
Now take the pizza base. Spred mayonese over it. then place a layer of tomato ketchup. now spread all the vegetables. spread tomatoes over it. Grate the pizza chesse and spread all over the pizza. sprinkle salt , black and white pepper powder.
Now comes how to cook the pizza. very simple............... you take the usual tawa which we use to make chapatis. put it on gas and heat it. Now take another flat bottom pan which you usually use for cooking vegetables. Place the pan on heated tawa. Now add a tsp of butter in the pan and let it melt. Now place the pizza in the pan with the toppings upside. Cover the pan with another plate or lid. Cook the pizza for 10 mins on low flame. Remove the lid and check if the cheese has melted. If not then cook for another 5-10 mins till the whole cheese is melted.
When pizza is cooked, take it out of the pan and cut into pieces with a knife or pizza cutter. Enjoy the delicious Veg pan pizza at home any time.

TIPS:
1. Do not cook the pizza directly on tawa. It may get  burnt. The idea of using the another pan is that the pizza will not get the direct heat and covering it will make a perfect baking surroundings around it.
2. The topping of pizza may vary according to your taste. you can make it simple onion pizza or chilli capsicum pizza or any flavour you have ever tried.
3. Instead of mayonese, pizza sauce can also be used.

Tawa butter naan

Introduction:
"Butter Naan" is one of the most popular indian bread. Mostly I get the chance to eat them in parties or in hotels. I'm really fond of it. So i thought to make them on my own but oopppss.....I don't have an oven or tandoor. Uppsss.. what to do now? I thought to make them on usual tawa and TADA..It was really good and mmmmm..tastes almost simliar like grilled or baked naan...Try to make it in this way if you don't have oven and enjoy the Naans any time at your home itself.

Ingredients:
Refined flour(Maida): 500 gm
Curd: 1 cup(preferably a day old)
Baking powder: 1 tsp
Soda bicarbonate: 1/2 tsp
Milk- 2 cups
Oil: 1 tsp
Dry yeast: 1/2 tsp or ENO fruit salt: 2 tsp
Salt: to taste
Sugar: 1 tsp
Butter: for greasing
Corriander leaves: for garnishing(chopped)

Serve for: 5 persons
Preparation time: 15 mins

Method:
Take the dry yeast and put in warm water for 2 mins. If you don't have dry yeast then Eno fruit salt is a very good option. mix the fruit salt in water and add to the flour. Sieve the flour, baking powder and sodabicarbonate together. Add curd, oil, yeast, salt, sugar and milk into it. Add fruit salt into it. kneed the dough. add water if necessary. kneed the dough properly so that it will get smooth and soft. cover it with a wet cloth and keep at some warm place for 45 mins.

The dough will ferment and will get doubled. Heat the tawa. Take small balls of the dough and roll into a chapati. Now fold it to give it a shape of triangle. roll again and make a thin chapati.Use some refined flour to avoid sticking of naan on plate. place the naan on tawa and roast it from both sides . Tawa should be on high flame. Roast the naan properly but do not overdo it. It should be a light roasting.sprinkle some water on tawa ,if it is too hot.
Apply butter on the naan.Sprinkle some corriander leaves and cut into 2-3 pieces.

Serve the hot butter naan with any curry or dry veg.

TIPS:
1. If you have oven or tandoor , you can roast the naan in it.
2. You can add 1 or 2 eggs to make it more soft and light.
3. Eno fruit salt is a very good option to add, if you are in hurry.
4. Always roast the naan on high flame and it takes very little time for the naan to be cooked . hence do it fast. otherwise it may get a lilltle hard, if you will keep it for long.

Nawabi Gobhi

Introduction:
Cauliflower and Green Peas are mostly available in the winter season. I tried to make a simple yet rich curry out of those. This tastes yummy and looks very rich. It is best combined with naan and paranthas. It is simple to make and a presentable recipe in any party. That's why, I named it as "Nawabi gobhi" . Check it out.

Ingredients:
Fresh cauliflower: 500gm
Fresh potatoes: 4 medium size
Green peas: 2 cups(boiled)
Tomatoes: 2 (medium size)
Onions: 2 big(sliced)
Ginger Garlic paste- 2 tsp
Tomato puree- 6 tsp
Green chillies- 1tsp(chopped)
Red chilli posder: 1 tsp
Turmeric powder: 1/2 tsp
Corriander powder: 1 tsp
Garam masala: 1/4 tsp
cumin seeds: 1 tsp
Asefoetida: 1 pinch
salt: as per taste
Oil: 4 tsp for curry
Oil : for frying
Green corriander leaves: for garnishing

Serves for: 4 persons
Preparation time: 15 mins
cooking time: 15 mins

Method:
Take the cauliflower and separate it's florets.remove the long and hard stems. wash it and pat dry. Peel the potatoes and cut into long thin slices. cut the tomatoes into long slices.Boil the green peas.Cut onions into long slices.
Heat sufficient oil in a Pan for frying the gobhi and potatoes. when oil is heated, put cauliflower pieces into it and fry them till light golden brown. remove them and put on a butter paper to remove excess oil. similarly fry the potato slices and keep them with fried gobhi.
In a separate pan, heat the oil. add cumin seeds and asefoetida, add sliced onions and green chillies.saute them till golden brown. Add ginger garlic paste and saute for 1 min. Now add tomato puree and boiled peas and cook till the oil separtes out of the puree. now add all the dry spices and cook for 2 mins. now add the fried gobhi and potato and the chopped tomato slices. Mix thoroughly . cook for a min.Put off the flame.
Garnish with fresh corriander leaves.Serve hot with naan, puri or chapati.
TIPS:
1.You can add capsicum in the same to make spicy Chilli gobhi.
2. Add boiled peas only . otherwise it takes a long time for the peas to get softened.

Mix fruit Jelly Icecream jubilee

Introduction:
This is the very simple and creative dish and mouth watering dessert. The trick lies in the presentation of the dessert . As i'm a big icecream lover, I got the idea of it by looking at a nice icecream picture. I tried to create the same picture in reality and it was a big hit. First time I served this for my best friend and he was amused by it.The ingredients listed here varies on your taste. You can add or remove any item as your choice. I'm telling you the ingredients, i generally use.

Ingredients:
Mix fruits(Mango, pineapple, apples, grapes,bananas,oranges,strawberries): 1 cup for each glass
Vanilla icecream: 1 pack
Weikfield jelly crystal pack: 1 pack
Different flavour icecreams: as much as you wish
cherries: for decoration
drinking chocolate powder: 1tsp
rose syrup or gulab sharbat: 2 spoon
honey: 1tsp
grated chocolate: 1 tsp
Serving glasses: 4

Serves for: 4 persons
Method:
Clean the glasses properly. The shape of glass adds to the beauty of the dish. Try to take designer glasswares. Boil 500 ml of water for 1 pack of weikfield jelly crystal. take the jelly powder in a bowl. add boiling water to it and place the jelly at room temperature to get set. after 45 min the jelly will be set and you can keep it in fridge.
Now in the glasses, place a layer of vanilla icecream with the help of spoon. thickness of the layer depends on the size of glasses. Now add rose syrup over the layer. now place the layer of mix fruits over it. Now add honey over the layer. now place a layer of fruit jelly over it.
again a layer of vanilla icecream or any othe flavoured icecream. again a layer of jelly and decorate it with adding cherries, grated chocolate. sprinkle drinking chocolate powder over it. keep in fridgeto cool. Serve chill.

TIPS:
1.The important point is that the icecream flavour you are choosing should be different from the fruits. Like if you are using mangoes then don't use mango icecream and like you don't have strawberries then use strawberry icecream. This will make the serving more versatile.
2. You can make this recipe without jelly too.
3. You can add choco chips and whipped cream for serving.
4.At last it totally depends on your imagination to fill the glasses such that it looks beautiful.

Macaroni cream salad

Introduction:
Salad is an important part of any feast. I tried to make a new kind of salad. I got the idea when the other day I was having some left over boiled macaronies and i was feeling a little lazy to make pasta out of it. so as a quick preparation, I made this salad with the help of the regular items stored in my fridge and it was yummy.

Ingredients:
Macaroni: 200 gm
Boiled potatoes: 1 cup(cut into long pieces)
Spring onion: 1 cup(finely chopped)
Tomatoes: 1 cup(cut into long pieces)
Green chillies: 1 tsp(chopped)
Lime juice: 1 tsp
Mayonese: 100 gm
Fresh Cream: 2 big spoon
Black pepper: 1 tsp
Salt: To taste 
Corriander leaves: for garnishing

Serves for: 4 persons

Preparation time: 10 mins

Method:
Boil the macaronies with enough water. When the macaronies are properly boiled, strain the excess water and pour cold water over the macaronies. Set them apart. cut all the vegetables into long thin pieces. take a bowl and mix all vegetables with macaronies. add mayonese, pepper and salt. add lemon juice. Referigerate it for 5 mins. Add fresh cream before serving. garnish with corriander leaves.

TIPS:
1. you can add any vegetables like boiled peas, corn, mushrooms,cabbage,capsicum etc. in salad.
2. you can also put some chilli sauce into it.
3. If you don't have mayonese then try this recipe by adding tomato sauce and garlic sauce. I tried it and it was yummy too.
4. you can make macaroni fruit salad by adding fruits instead of vegetables.
5.you can keep boiled macaronies in fridge for 2-3 days. just make the salad instantly whenever you want.

Mint Melon Juice

Introduction:
Cool and chilled beverages are always a soothing comfort in this hot , radiating summar
season. Water melon is an amazing fruit to keep yourself chill and away from the health
problems caused by the UV rays of sun. I love this fruit and it’s easily available in this
season. So I thought to try a simple beverage made out of watermelon. I named it MINT
MELON JUICE and it’s a very good appetizer. It contains all the nutrients of water
melon and tastes wonderful.

Ingredients:
Watermelon: 1 big(approx 1-2 kg)                       
Fresh green mint leaves: 6-7(for each glass)
Black salt: 1 tsp
Roasted cumin seed powder: 1 tsp
Sugar: 2 big spoon
Ice cubes: 6-7

Serves For: 4 persons

Preparation Time: 5 MIN

Method:

TAKE THE WATERMELON AND CUT IT INTO 4 BIG PIECES. REMOVE THE COVER AND CUT
INTO SMALL PIECES. REMOVE THE SEEDS WHILE CUTTING.POUR THE WATERMELON PIECES INTO A BLENDER. ADD MINT LEAVES, BLACK SALT, SUGAR,CUMIN SEED POWDER AND ICE. BLEND THE MIXTURE. ADD ICE CUBES AND BLEND AGAIN.POUR THE JUICE INTO GLASSES AND SERVE COOL. THE MINT MELON JUICE WILL KEEP YOU CHIIL IN THIS PRICKLING, HOT SEASON.

TIPS:
1. YOU CAN ADD MORE SUGAR AS PER YOUR TASTE OR IF YOU LIKE TO ENJOY THE NATURAL
SWEETNESS, THEN AVOID SUGAR IN THE JUICE.
2. DON’T KEEP IT FOR LONG. USE IT FRESH. YOU CAN KEEP THE WATERMELON PIECES INTO
FRIDGE BUT NOT THE JUICE. ITS TASTE WILL CHANGE.
3. YOU DO NOT NEED TO ADD WATER INTO IT. AS WATERMELON IS ITSELF JUICY
.
Hi all,
Yesterday I had a dinner party at my home. I arranged this party for my fellow juniors
and my close friends. At first, I was pretty confused about what should be the menu for
the party which will be easy to make, suits the weather and looks rich and delicious.
Moreover, I want to make something from all seasonal veggies and fruits to have more
healthy taste.
So after all searching and thinking, I decided a simple yet amazing and tasty menu. It was:


1.Mint melon juice(Starter cum appetizer)
2.Shahi Palak Paneer
3.Nawabi gobi
4.Lauki ka Raita
5.Macroni cream salad
6.Tawa butter naan
7.Mix fruit jelly Ice-cream jubilee(Dessert)


The menu was simple and suitable for these hot summer weather as it was neither too
heavy to digest nor oily. Everyone liked it and I enjoyed a lot while cooking all those
dishes. I made some preparation a day before just to speed up the task. I’ll tell the tips in
the recipe itself. Follow all those recipes in my subsequent posts.

Time saving cooking tips

As I have a routine office schedule, I found some ideas to save time while preparing food. This helps to speed up the cooking process and make it more enjoyable. you also try these ideas and feel much more comfortable with daily food preparation.All you need is one holiday to prepare the vegetables the way i'm gonna tell you and make all kinds of dishes the whole week without getting worried about the time consumed in preparation.I'm gonna tell you some tips on routine vegetables that will save a hell lot of time during your cooking.

1. Onions are an important part of most of the dishes but it takes a lot of time to peel and cut the onions. Moreover you have to face the tears coming out of your beautiful eyes while chopping it.So the best way is peel about 8-10 onions altogether.Cut each onion in two halves.Put them in a bowl filled with cold water for 10-15 minutes. take out the onions and wipe them with a clean cloth. Chop/slice the onions as you wish. You will not find tears in your eyes.
                  Then put 1/2 tsp of oil into a pan and fry the onions till the color changes. Now place the fried onions into aluminium foil. wrap it and place in an air tight container. keep in fridge. This will last for more then 7 days.This will make your cooking faster. even if you wanna pureed onions for some gravy dishes, you can directly puree those fried onions into grinder and use it.

2. Garlic and Ginger are also used in most of the dishes. For ginger, peel off the skin and wrap them in foil paper and freeze it. If you like to add ginger paste into food, then paste thses gingers and keep in an air tight container in fridge. you do not need to buy ginger garlic paste from market.
Same thing can be done with garlic too. As garlic used to give a typical smell, it may cause odour in your fridge. so place the garlic paste into freezer zone and make sure the container is fully air tight.

3. Tomato puree can be made at home and save for 3-4 days without adding any preservative. Wash 10-12 tomatoes. clean it and make paste out of it. add some salt into it and place it in an air tight container. Keep it in fridge.

4. Before putting Green chillies into fridge, remove their stems.This will keep them fresh for long.

5. Leafy vegetables like spinach, Methi, coriander, mint etc. used to loose their color as soon as these are a day old. So for storing them for 4-5 days remove their stems, and wrap them in a newspaper or put into steel containers. It'll make them fresh for long.

6. Green Peas are available mostly in winter season but what if you are feeling like to eat Matar paneer in this hot summar season. just chill. The best way is to buy a lot of Green peas into winter season. Peel them and place the peas into a plastic box or polythene bags and put into freezer and freeze it. You don't need to buy frozen veggies. This will last till the next winter season.

7. Cabbage takes a lot of time in cutting. so as soon as you buy cabbage cut the whole the way you like. Place in a net bag and keep in fridge. It'll remain as fresh as the whole cabbage.

8. Always keep boiled Potatoes in your fridge. Boiled potatoes can be directly mix into each vegetable and cook faster then raw potatoes.

9. For Lemons, you can take out all the juice. strain it to remove seeds and place in a glass bottle. cover and keep in fridge.

10. Cut the french beans into small pieces and place in a net bag. Store in fridge and use it directly.

Now you are ready with your fridge to prepare any kind of dishes ,even on weekdays with the hectic schedule. No matter if your husband invites guests at home suddenly for dinner, now you are all geared up.

Fruit cake pudding

Introduction:
Today i'm going to tell you a very easy dessert made up of fruit cake. As it gives more delight to serve a dessert made up of your own to your guests compare to market made sweets, I keep discovering easy and quick recipes.I tried this recipe many times and every time people just loved it.

Ingredients:
Milk: 500 ml
Fruit cake: 1 pack(6-8 pieces)
Sugar: 1 cup
Corn flour: 2 Tsp
Green cardamon powder: 1 Tsp
Raisins and dryfruits: for decoration
Rose water: 1 Tsp
Vanilla essence: 2-3 drops
liquid edible yellow color: 2-3 drops(optional)

Served for: 3 Persons

Cooking time: 20 mins

Method:
Take milk in a heavy bottomed vessel and put it on gas to boil. Keep some cold milk aside to make corn flour paste.Let the milk to boil on high flame. after a boil, reduce the flame,add cornflour paste and keep cooking the milk till it reduces to half of it's original consistency. Add sugar and liquid color to it. Amount of sugar may vary as per your taste.when the milk is cooked, put off the flame.let it cool for 2-3 mins. Add rose water, cardamon powder and all raisins to it. Add vanilla essence.

In a flat bottom glass bowl, arrange the fruit cake pieces orderly.pur the milk mixture over it. decorate with dryfruits. keep in fridge to set and cool. After an hour the pudding will be set.
Serve cool in pudding bowls. You can add fresh processed cherries while serving or any fruit of your liking.Garnish with dryfruits and fresh whipped cream while serving.

Tips:
1.You can also bake the pudding in oven for 10 mins.If you wanna bake it then do not reduce the milk to half. Let it remain some more liquid.
2. Fruit cake is easily available in market with different brands in flavour. you can try different flavours with different essence and colors
3.Buy pineapple flavoured fruit cake and add pineapple essence in milk mixture. while serving, use freshly chopped pineapples to make yummy pineapple bread pudding.

Papaya Halwa

Introduction:
I'm going to tell you a very simple and easy to cook halwa recipe. I learnt it from my friend's mother.It's made by papaya and it's a delight to all those persons who hate to eat papaya including me. It's a very healthy and nutritious recipe which has very low calorie as i'm not adding too much ghee or condensed milk into it. It gives much pleasure when people eat it first time and get surprised to know that it's made up of papaya.So try this recipe and enjoy.


Ingredients:
Papaya: 1 big
sugar: 1 cup
ghee: 2 tsp
cardamon (elaichi)powder: 1 tsp
saffron: 4-5 leaves
dryfruits: cashewnuts, pista, almonds grated(for decoration)

Served for: 2 persons

Preparation time: 15 min

Method:
Take the papaya and peel off it's skin through a peeler knife. make sure that the papaya should neither be fully raw nor fully rippen. otherwise it'll create problem during grating the papaya. after peeling cut the papaya into two halves and remove all the seeds and inner skin with the seeds.

Now grate the papaya. It'll also release juice out of it . keep all into a bowl. mix sugar in the grated papaya and keep it aside for 1/2 an hour. You can add more sugar if you feel that the mixture is not sweetend properly but avoid to add too much sugar into it as it'll make the halwa to get hard after cooking.

Now take a non stick pan. Pour the papaya and sugar mixture into it and put it on high flame. Keep stirring till the whole liquid of the mixture is cooked. Add saffron. You can add some yellow color if you don't have saffron. Keep cooking on high flame till the mixture gets thick like halwa. Add ghee and cardamon powder. Mix properly. Put off the flame. Mix the dryfruits. Serve hot.

Tips:
1.You can keep it for 5-6 days without freezing.
2.You can avoid ghee if you want as it is added just for giving a little consistency to halwa so that it does not get hard if kept for long.
3.You can also make nice papaya laddoos out of the same mixture. Just cook it for 2-3 minutes more and add some more sugar to get it thick and let it cool. prepare small balls of it and decorate with dryfruits.
